Special Occasion Potatoes

- 3 pounds potatoes shopping list
- 2 large onions thinly sliced shopping list
- 1/2 teaspoon salt shopping list
- 1/4 cup butter shopping list
- 3 tablespoons all-purpose flour shopping list
- 2 cups milk shopping list
- 3/4 teaspoon salt shopping list
- 1/4 teaspoon white pepper shopping list
- 1/2 cup chopped fresh parsley shopping list
- 2 ounce jar diced pimientos drained shopping list
- fresh parsley sprigs for garnish shopping list
How to make it
- Peel and cut enough potatoes into 1/4” slices to measure 8 cups.
- Combine potato slices, onion and salt in large Dutch oven then add water to cover.
- Bring to a boil then cover and reduce heat.
- Cook 5 minutes then drain and set aside.
- Melt butter in a heavy saucepan over low heat.
- Add flour stirring until smooth then cook 1 minute stirring constantly.
- Gradually add milk then cook over medium heat stirring constantly until mixture is thickened.
- Stir in the salt and the next 3 ingredients.
- Spoon potato mixture into a lightly greased rectangular baking dish.
- Pour sauce over potato mixture then bake at 375 for 40 minutes.
