- 1/2 LB LONG GRAINED rice shopping list
- A GOOD PINCH OF saffron shopping list
- 2 OZ butter shopping list
- 1.1/2 PINTS OF stock shopping list
- 1.1/2 OZ cheese shopping list
How to make it
- MELT TWO THIRDS OF BUTTER
- ADD FINELY DICED ONION, COVER AND COOK SLOWLY UNTIL SOFT BUT NOT COLOURED.
- ADD RICE, FRY FOR FEW MINUTES UNTIL RICE LOOKS CLEAR, ADD SALT AND PEPPER, THE SAFFRON SOAKED AS FOR RISOTTO, AND 1.1/4 PINTS OF STOCK.
- BRING TO BOIL, COVER TIGHLY, PUT IN MODERATE OVEN FOR 20 - 3- MINUTES, UNTIL GRAINS ARE TENDER ADN STOCK ABSORBED.
- ADD EXTRA STOCK IF NECESSARY,
- WITH FORK STIR IN HE REST OF THE BUTTER AND CHEESE.
- TO THIS BASIC RECIPE MAY BE ADDED SHREDDED LEFTOVERS OF CHICKEN, HAM,AND SO ON WITH THE RICE OR STIRRED IN DURING COOKINH.
