Potatoe Corn Chowder

- 6 slices bacon shopping list
- 1/2 cup onion shopping list
- 2 potatoes, peeled and cubed shopping list
- 1/2 cup red pepper shopping list
- 1/2 cup yellow pepper shopping list
- 3 cups milk shopping list
- 1 15 oz can creamed corn shopping list
- 1 cup fresh or frozen corn shopping list
- 1 teas. thyme shopping list
- salt & pepper shopping list
How to make it
- Cook bacon in large sauce pan until crispy. Remove bacon and set aside. Discard half the bacon fat from pan. Add onion, red and yellow peppers, potatoes and saute about 4 minutes. Add the milk and bring to boil. Reduce heat and simmer until vegetables are tender, about 10 minutes. Add creamed corn, corn, and thyme and simmer until heated through. Season with salt and pepper and crumble bacon on top of each serving.
