Grilled Cheese And Tomato Sandwich Recipe
I can never resist the gooey goodness of a grilled cheese sandwich - particular with tomato and a smear of mustard.

Ingredients
  • 2 slices multigrain bread
  • 1 tsp softened butter (optional)
  • 2 tsp Dijon mustard
  • 1 oz cheddar, gruyere, or other cheese for melting, sliced
  • 2-4 slices fresh tomatoes
  • salt

Directions
  1. Put a small skillet (with lid) over medium heat.
  2. If desired, butter one side of each slice of bread.
  3. Smear mustard on the unbuttered side of the bread slices.
  4. Arrange cheese slices over one mustard-covered slice of bread.
  5. Cover cheese with tomato slices.
  6. Sprinkle with salt, if desired.
  7. Cover with the other slice of bread, mustard side down.
  8. Place the assembled sandwich in the skillet, and cover to help the cheese melt.
  9. When the bread is golden on one side, flip the sandwich.
  10. Continue cooking uncovered until the other side is golden.
  11. Cut diagonally into two triangles and serve hot.

Just stumbled across this recipe - I haven't had a grilled cheese and tomato sandwich for a while. With the summer weather knocking at the door, this sounds so good! Will have to find a nice beefsteak and make one soon!
