These are very pretty and very tasty. I host a large cookie exchange every year and this is a recipe my Aunt Charlene makes every year and it is always one of the first to go in the exchange. Not only are they beautiful, they are very tasty. Enjoy

Ingredients
  • 8 ounce package chopped pitted dates
  • 1/2 cup flaked coconut
  • 1/2 cup granulated sugar
  • 4 tablespoons butter
  • 1 slightly beaten egg
  • 1/8 teaspoon salt
  • 1-1/2 cups crisp rice cereal
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla
  • 6 ounces fine red sugar crystals
  • 1 tube green decorating icing with decorating tips

Directions
  1. In skillet combine dates, coconut, sugar, butter, egg and salt.
  2. Cook and stir over medium low heat until mixture thickens and bubbles about 10 minutes.
  3. Remove from heat then stir in cereal, walnuts and vanilla.
  4. Cool 10 minutes.
  5. For each cookie use 1 tablespoon date mixture and form into a strawberry shape.
  6. Roll each cookie in red sugar crystals then trim with green frosting leaves.
