Trifle In The Family Recipe
I love trifle and this is one of my favourite trifle recipes that I thought I'd share. It's been in the family for awhile and goes back to when we lived in Ireland.

Ingredients
  • 1 8" sponge cake or 14 - 16 Ladyfingers
  • 3 ounces Strawberry/Raspberry/Cherry Jell-O
  • 1 cup Port, Sherry (good quality) or Raspberry Liqueur
  • *Make sure it has been chilled.
  • 1 can fruit salad, drained
  • 1 cup heavy cream, whipped
  • Strawberries, raspberries or cherries
  • A handful of almonds, lightly toasted (optional)
  • 1-1/2 envelopes or packets of Birds custard
  • 2 Tbsp. sugar
  • 3 cups 2% or Homogenized Milk

Directions
  1. Place sponge cake in glass Trifle dish.
  2. Arrange fruit salad on top.
  3. In a small bowl, add 1 cup of boiling water to dissolve Jell-O.
  4. Then add 1 cup Port/Sherry (chilled) and 1/3 cup of ice cold water.
  5. Pour liquid over the mixture.
  6. Combine custard powder and sugar in small bowl and mix with some of the milk.
  7. Put remainder of milk in saucepan and bring to a boil.
  8. Add the Birds pudding mixture gradually to the milk and bring to a full boil, stirring constantly.
  9. Pour mixture over the sponge cake and fruit and chill for at least 2 hours.
  10. Shortly before serving, pile whipped cream on top of pudding.
  11. Arrange strawberries, raspberries or cherries and toasted almonds.

Sounds good but what is Birds custard? Would it be similar to a vanilla pudding mix, the one you cook?


Great trifle recipe Mishi. To answer Slevans question, Birds Custard comes in a packet and is prepared in a saucepan. It's so good and is something I grew up enjoying. Thanks Mishi for a great "5" fork recipe!
