Trifle In The Family Recipe

I love trifle and this is one of my favourite trifle recipes that I thought I'd share. It's been in the family for awhile and goes back to when we lived in Ireland.

Ingredients
- 1 8" sponge cake or 14 - 16 Ladyfingers
- 3 ounces Strawberry/Raspberry/Cherry Jell-O
- 1 cup Port, Sherry (good quality) or Raspberry Liqueur
- *Make sure it has been chilled.
- 1 can fruit salad, drained
- 1 cup heavy cream, whipped
- Strawberries, raspberries or cherries
- A handful of almonds, lightly toasted (optional)
- 1-1/2 envelopes or packets of Birds custard
- 2 Tbsp. sugar
- 3 cups 2% or Homogenized Milk
Directions
- Place sponge cake in glass Trifle dish.
- Arrange fruit salad on top.
- In a small bowl, add 1 cup of boiling water to dissolve Jell-O.
- Then add 1 cup Port/Sherry (chilled) and 1/3 cup of ice cold water.
- Pour liquid over the mixture.
- Combine custard powder and sugar in small bowl and mix with some of the milk.
- Put remainder of milk in saucepan and bring to a boil.
- Add the Birds pudding mixture gradually to the milk and bring to a full boil, stirring constantly.
- Pour mixture over the sponge cake and fruit and chill for at least 2 hours.
- Shortly before serving, pile whipped cream on top of pudding.
- Arrange strawberries, raspberries or cherries and toasted almonds.

Sounds good but what is Birds custard? Would it be similar to a vanilla pudding mix, the one you cook?

Great trifle recipe Mishi. To answer Slevans question, Birds Custard comes in a packet and is prepared in a saucepan. It's so good and is something I grew up enjoying. Thanks Mishi for a great "5" fork recipe!
