How to make it

  • heat water and espresso until simmering
  • add ginger, cayenne powder, cinnamon, stir
  • add chocolate chips progressively, stirring
  • making sure chocolate doesn't burn, cut tofu down to bite size, thinner could allow you more concentrated taste
  • when chocolate is at a medium watery boil, add tofu, stirring until chocolate is thick and you can just smell it starting to burn
  • drain tofu from chocolate
  • whisk 2 eggs and toss tofu in, covering
  • toss tofu in flour and slide into wok you have already heated with oil and 2 more tsp of cayenne
  • while frying keep chocolate liquid simmering uncovered until reduced, drizzle on tofu when done
  • serve hot
