Ingredients
  • 1 red pepper, seeded and chopped
  • 2 jalapeno peppers seeded and chopped
  • 4 green onions, chopped
  • 2 garlic cloves, chopped
  • 3 large tomatoes, coarsely chopped
  • 19oz black beans, rinsed and drained
  • 19oz tomato juice
  • 2 tbsp red wine vinegar
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste

Directions
  1. Place red pepper, jalapeno peppers, green onions and garlic in food processor, pulse to chop finely, and transfer to a large bowl.
  2. Add tomatoes to food processor and process until finely pureed.
  3. Add black beans and tomato juice to pepper mixture.
  4. Add vinegars, season with salt and pepper and chill before serving.
