A different take on coleslaw for the summer. Cook time is chill time. Recipe and photo from a Land o Lakes cookbook 1994.

Ingredients
  • 2 C cauliflower flowerets
  • 2 C prepared cole slaw mix
  • 1 C (4 oz) shredded cheddar
  • 1/4 C chopped onion
  • 1 medium (1/2 C) carrot, shredded
  • 1 ( 8 oz) bottle of cucumber dressing'5 slices crisply cooked bacon, crumbled (reserve 1 Tbl for garnish)

Directions
  1. In a medium salad bowl toss together all ingredients except reserved bacon, until well blended
  2. Cover; refrigerate at least 4 hours
  3. Just before serving, sprinkle with reserved bacon
