How to make it

  • Make custard sauce ahead of time, see recipe below
  • For Pineapple:
  • Mix sugar and rum.
  • Slice horizontal wedge from pineapple.
  • Lift top and remove fruit carefully cutting into small chunks.
  • Add sugar and rum to fruit.
  • Return cut rummed fruit into pineapple.
  • Top fruit with butter and cover entire pineapple with foil.
  • Place on baking sheet.
  • Bake 350 for 20 minutes or till heated well
  • Serve warm rummmed pineapple with chilled custard sauce.
  • For sauce: combine sugar cornstarch, milk and salt in
  • saucepan.
  • Cook over low heat until smooth and thick ( 15 mins ).
  • Add small amount of cooked custard to egg yolks; mix and pour into remaining custard over heat.
  • Cook several minutes longer and thickned again
  • Remove from heat .
  • Add vanilla and chill well.
  • Note: one may also use any favorite custard sauce for the recipe or even top the fruit with sweetened whipped cream!

    Looks good!. I had a fresh pineapple last week and when I looked for something special to do with it, I found Happy Pineapple by qbancncer which I will make for our boating friends this summer. Thanks for your recipe which I am book marking.
