Mexican Pineapple and Custard Dessert

- 1/4 c sugar, white or dark brown shopping list
- 1/4 c rum shopping list
- 1 pineapple, fresh and ripe shopping list
- 4 tb butter shopping list
- custard sauce: shopping list
- 1/2 c sugar shopping list
- 2 tb cornstarch shopping list
- 2 c milk shopping list
- 1/4 ts salt shopping list
- 3 egg yolks beaten shopping list
- 1 ts vanilla shopping list
How to make it
- Make custard sauce ahead of time, see recipe below
- For Pineapple:
- Mix sugar and rum.
- Slice horizontal wedge from pineapple.
- Lift top and remove fruit carefully cutting into small chunks.
- Add sugar and rum to fruit.
- Return cut rummed fruit into pineapple.
- Top fruit with butter and cover entire pineapple with foil.
- Place on baking sheet.
- Bake 350 for 20 minutes or till heated well
- Serve warm rummmed pineapple with chilled custard sauce.
- For sauce: combine sugar cornstarch, milk and salt in
- saucepan.
- Cook over low heat until smooth and thick ( 15 mins ).
- Add small amount of cooked custard to egg yolks; mix and pour into remaining custard over heat.
- Cook several minutes longer and thickned again
- Remove from heat .
- Add vanilla and chill well.
- Note: one may also use any favorite custard sauce for the recipe or even top the fruit with sweetened whipped cream!
