Bean and Bacon Casserole

- 1 1/2 lb. ground beef shopping list
- 1 19 oz. can stewed tomatoes shopping list
- 2 cups navy beans shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 2 cooking onions, sliced thinly shopping list
- 1 cup brown sugar (more if needed for layering) shopping list
- 1/2 lb. sliced bacon (or less if 1/2 lb. doesn't fit the casserole dish) shopping list
How to make it
- Day Before: Soak navy beans overnight.
- Next Day: Bring a pot of water with 1 tbsp. baking soda to a boil and add beans. Simmer until beans are tender.
- Brown ground beef and add salt and pepper, tomatoes and cooked beans. Taste for seasonings and add more salt and pepper if required.
- In a casserole dish layer meat/bean mixture, sliced onions, brown sugar. Continue to layer until casserole dish is full. Top with a layer of bacon and a generous sprinkle of brown sugar. Bake at 375 F for 1 1/2 hours.
