Bean And Bacon Casserole Recipe
This is a casserole I used to ask for when I was growing up. I loved the sweetness of the brown sugar and bacon against the savoury flavor of the beans and tomatoes. It really is delicious!

Ingredients
  • 1 1/2 lb. ground beef
  • 1 19 oz. can stewed tomatoes
  • 2 cups navy beans
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cooking onions, sliced thinly
  • 1 cup brown sugar (more if needed for layering)
  • 1/2 lb. sliced bacon (or less if 1/2 lb. doesn't fit the casserole dish)

Directions
  1. Day Before: Soak navy beans overnight.
  2. Next Day: Bring a pot of water with 1 tbsp. baking soda to a boil and add beans. Simmer until beans are tender.
  3. Brown ground beef and add salt and pepper, tomatoes and cooked beans. Taste for seasonings and add more salt and pepper if required.
  4. In a casserole dish layer meat/bean mixture, sliced onions, brown sugar. Continue to layer until casserole dish is full. Top with a layer of bacon and a generous sprinkle of brown sugar. Bake at 375 F for 1 1/2 hours.
