Fruited Ricotta Bread

- 4 cups all purpose flour shopping list
- 2 teaspoons baking powder shopping list
- 1/4 teaspoon salt shopping list
- 2 cups ricotta cheese shopping list
- 3 eggs beaten shopping list
- 1 teaspoon vanilla extract shopping list
- 2/3 cup sugar shopping list
- 3 tablespoons chopped candied fruit shopping list
- 2 tablespoons golden raisins shopping list
- 1 tablespoon chopped almonds shopping list
- 1 tablespoon grated lemon peel shopping list
- 1 tablespoon butter melted shopping list
- 1 tablespoon powdered sugar shopping list
How to make it
- Preheat oven to 275 then grease and flour a cookie sheet.
- Sift flour, baking powder and salt into a large bowl.
- Make a well in center and stir in ricotta, eggs, vanilla, sugar, fruit, raisins, almonds and peel.
- Knead lightly until dough holds together.
- Shape into a 12” long loaf and place on prepared cookie sheet and bake 60 minutes.
- Transfer to a wire rack then brush melted butter over warm loaf.
- Sift powdered sugar over top then cool completely.
