Fresh from outdoors, dandelions are nutritious, free, delicious- who could want more ! Cooked dandelions taste a bit like spinach and may have a slightly bitter flavor. They are highly nutritious and good for you too. Use tender leaves.

Ingredients
  • Olive oil to saute
  • 1 bunch of young dandelion leaves ( 2 cups )
  • 1 small onion chopped
  • 1 small firm tomato chopped
  • 1 large clove of garlic chopped
  • 4 eggs
  • 1 Tbs cream or milk
  • salt, pepper, paprika to taste- (smoked paprika is awesome in this recipe )
  • dadelion flowers as garnish

Directions
  1. Pick young leaves ,cut off roots if any, rinse in several washings of cold warer.
  2. Drain well and discard any grass etc.
  3. Chop coarsley.
  4. In saute pan, heat oil, saute onions till softened add garlic and cook a minute or two.
  5. Add dandelions and cook until wilted.
  6. Add tomatoes and cook and stir a few minutes longer.
  7. Season as desired.
  8. Fork beat 4 eggs with a bit of cream or milk.
  9. Stir/swirl into mixture in pan unti eggs are set.
  10. Place frittata on a platter or individual servings plates, garnish with fresh cleaned dandelion flowers.
  11. Flowers are edible too, but I use them for garnish!
