How to make it

  • Pick young leaves ,cut off roots if any, rinse in several washings of cold warer.
  • Drain well and discard any grass etc.
  • Chop coarsley.
  • In saute pan, heat oil, saute onions till softened add garlic and cook a minute or two.
  • Add dandelions and cook until wilted.
  • Add tomatoes and cook and stir a few minutes longer.
  • Season as desired.
  • Fork beat 4 eggs with a bit of cream or milk.
  • Stir/swirl into mixture in pan unti eggs are set.
  • Place frittata on a platter or individual servings plates, garnish with fresh cleaned dandelion flowers.
  • Flowers are edible too, but I use them for garnish!
