Dandelion Frittata

- olive oil to saute shopping list
- 1 bunch of young dandelion leaves ( 2 cups ) shopping list
- 1 small onion chopped shopping list
- 1 small firm tomato chopped shopping list
- 1 large clove of garlic chopped shopping list
- 4 eggs shopping list
- 1 Tbs cream or milk shopping list
- salt, pepper, paprika to taste- (smoked paprika is awesome in this recipe ) shopping list
- dadelion flowers as garnish shopping list
How to make it
- Pick young leaves ,cut off roots if any, rinse in several washings of cold warer.
- Drain well and discard any grass etc.
- Chop coarsley.
- In saute pan, heat oil, saute onions till softened add garlic and cook a minute or two.
- Add dandelions and cook until wilted.
- Add tomatoes and cook and stir a few minutes longer.
- Season as desired.
- Fork beat 4 eggs with a bit of cream or milk.
- Stir/swirl into mixture in pan unti eggs are set.
- Place frittata on a platter or individual servings plates, garnish with fresh cleaned dandelion flowers.
- Flowers are edible too, but I use them for garnish!
