  • 1 1/2 pounds of fresh tuna steaks, about 1 in. thick
  • 2 tbsp of Cajun seasoning
  • 2 tbsp butter
  • 2 tbsp olive oil

Directions
  1. First, coat the tuna, generously, with Cajun seasoning. Heat the butter and olive oil in a large sized skillet over a high heat. Then, when the oil is almost smoking, add the steaks to the pan. Wonderful, it must be almost raw inside.
I tried it substituting a paste made of dried Peruvian chiles fo the cajun dressing and it was excelent with a wiff on hotness.
