South African Sweet Potato Fritters Recipe

Ingredients

1 lb sweet potatoes, peeled

1 cup flour

1 egg

1/4 cup butter, melted

pinch salt

oil

Directions

Grate potatoes.

Cover with boiling water and let stand 15 minutes.

Drain well.

Combine potatoes, flour, egg, butter and salt.

If to stiff add a bit of water or to thin add a bit of flour.

Drop by Tablespoons into hot fat and fry golden

Drain on toweling.

I like to put powdered sugar on these
