How to make it

  • Heat oil in heavy duty pan and cook and stir for several minutes all ingredients except tomatoes and basil.
  • Then cover and cook medium low heat for 45 minutes.
  • Stir in tomatoes and simmer uncovered 15 more minutes.
  • Stir in basil. Adjust seasoning to taste.
  • Serve with rice or couscous.

    Made a double batch and thank goodness I did. Served with mashed potatoes instead of rice/couscous. So good.
