Algerian Vegetable Stew

- 4 Tbs. olive oil shopping list
- 2 medium zucchini cubed shopping list
- 1 large eggplant, peeled and cubed shopping list
- 2 large green bell peppers cut into small pieces shopping list
- 1 med carrot, peeled and cut into small pieces shopping list
- 3 med onions chopped shopping list
- 1 whole head of garlic, peeled and crushed shopping list
- salt and pepper as desired shopping list
- 2 cups water shopping list
- 2 cups stewed tomatoes shopping list
- 1 Tbs dried basil or fresh equivalent shopping list
How to make it
- Heat oil in heavy duty pan and cook and stir for several minutes all ingredients except tomatoes and basil.
- Then cover and cook medium low heat for 45 minutes.
- Stir in tomatoes and simmer uncovered 15 more minutes.
- Stir in basil. Adjust seasoning to taste.
- Serve with rice or couscous.
