HOT SPANISH SANDWICHES This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 1/3 cup bacon
  • 1/4 cup chopped onions
  • 1/4 cup chopped green peppers
  • 1 cup tomato juice
  • 2/3 cup grated cheese
  • 1 beaten egg
  • 1/4 teaspoon paprika
  • 2 tablespoons butter
  • Hot buttered toast

Directions
  1. Brown bacon in skillet then add onions and green pepper and simmer 5 minutes.
  2. Add tomato juice and grated cheese.
  3. Let cook slowly stirring constantly until mixture is thick and creamy.
  4. Add egg, paprika and butter.
  5. Cook sauce 1 minute stirring then spread on hot buttered toast.
