Rhubarb Cooler

- 6 lbs. fresh rhubarb shopping list
- 2 qt. water shopping list
- 6 qt. ice water shopping list
- 4 C. sugar shopping list
- 2 C. frozen orange juice shopping list
- 2 C. frozen lemon juice shopping list
- 2 C. pineapple juice shopping list
- mint leaves shopping list
How to make it
- In a large pot, cook rhubarb over medium-high heat until soft and somewhat mushy.
- Strain, reserving all liquid.
- Add sugar, orange juice, lemon juice, and pineapple juice.
- Now add 6 qt. ice water.
- Serve with mint leaves for garnish.
- ** If you know enough a head of time that you will be making this tasty drink, freeze the mint leaves into your ice cubes to give it more punch!**
