Coffee n Cream Brownies

- 1/2 cup butter, cubed shopping list
- 3 squares (1 ounce each) unsweetened chocolate, chopped shopping list
- 2 eggs shopping list
- 1 cup sugar shopping list
- 1 tsp vanilla extract shopping list
- 2/3 cup all-purpose flour shopping list
- 1/4 tsp baking soda shopping list
- Filling: shopping list
- 1 T heavy whipping cream shopping list
- 1 tsp instant coffee granules shopping list
- 2 T butter, softened shopping list
- 1 cup confectioners' sugar shopping list
- Glaze: shopping list
- 1 cup (6 ounces) semisweet chocolate chips shopping list
- 1/3 cup heavy whipping cream shopping list
How to make it
- In a saucepan over low heat, melt butter and chocolate; cool slighly. In a small mixing bowl, beat eggs, sugar and vanilla; stir in the chocolate mixture. Combine flour and baking soda; add to the chocolate mixture. Spread into a greased 8-inch square baking pan. Bake at 350 for 25-30 minutes or until a toothpick inserted near center comes out clean (do not overbake). Cool on a wire rack.
- For filling, combine cream and coffee granules in a small bowl; stir until coffee is dissolved. In a small mixing bowl, beat butter and confectioners' sugar. Add coffee mixture; beat until creamy. Spread over brownies.
- In a small saucepan, combine chips and cream. Cook and stir over low heat until chocolate is melted and mixture is thickened. Cool slighly. Carefully spread over filling. Let stand for 30 minutes or until glaze is set. Cut into squares. Store in refrigerator. Garnish with a coffee bean, if desired.
