Refreshing plum soup great for those outdoor suppers on a hot evening.

Ingredients
  • 1 (1lb. 3oz) can plums
  • 1 cup water
  • 2/3 cup sugar or 1/2 cup honey
  • 1 cinnamon stick
  • 1/4 teaspoon pepper
  • pinch of salt
  • 1/2 cup heavy cream
  • 1/2 cup red wine
  • 1 tablespoon cornstarch
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon grated lemon rind
  • 1 cup sour cream
  • 3 tablespoons brandy(optional)
  • additional sour cream and cinnamon for garnish

Directions
  1. Drain, pit and chop plums, reserving syrup
  2. Combine plums, syrup, water, sugar and cinnamon, pepper and salt and bring to a boil.
  3. Reduce heat and cook for 5 minutes
  4. Stir in heavy cream and red wine mixed with cornstarch.
  5. Continue cooking and stirring until thick.
  6. Add lemon juice and rind and remove from heat
  7. Whisk one cup of soup with sour cream and brandy in separate bowl until smooth, then add to rest of plum mixture
  8. Chill, covered, at least 4 hours
  9. Garnish with additional dollop of sour cream and sprinkle cinnamon if desired
