Ingredients

1 medium size milkfish

1 head garlic - pounded

1 tablespoon salt

a pinch of pepper

1 teaspoon sugar

1/4 cup white vinegar

oil for frying

Directions

Wash fish do not remove scales then cut lengthwise starting from the nape down to tail. remove all the internal part. wash. set aside.

in a separate bowl, mixed all the ingredients except for oil and fish.

reserved 2 tablespoon of the mixture for the dippings.

then marinate the fish with the mixture for 30 minutes.

deep fry until golden brown.

serve with the reserved dippings.

(optional: serve with your favorite salsa)

Thanks. It is the most common fish here in the philippines known as BANGUS.You can cook it as is or with other ingredients added. One of the major city here celebrates Bangus Festival annually, try to visit www.dagupanbangusfestival.com.
