Ricotta Cheese Fritters

- 8 oz whole milk ricotta cheese shopping list
- 2 eggs shopping list
- 1 1/2 tbs softened butter at room temp shopping list
- grated zest of one lemom shopping list
- salt to taste shopping list
- Enough flour to bind for a thick batter shopping list
- 1/2 cup honey ( topping ) shopping list
- oil to fry shopping list
How to make it
- Beat cheese with whisk till creamy.
- Blend in fork beaten eggs.
- Add peel and butter.
- Gradually add enough flour to bind mixture into thick batter consistency.
- Set aside for 2 hours
- Then put at least an inch of oil in a heavy duty skillet and heat medium high.
- Drop batter by Tbs at a time and they should puff up in balls.
- Drain on paper toweling.
- Place on platter and pour on the honey over fritters
- Serve at once
