Ingredients
  • 6 ounces spaghetti
  • 1 shallot, finely chopped
  • 4, 1oz. slices Canadian bacon (trim the fat off) and cut into matstick size pieces
  • 1 tablespoon plus 1 teaspoon unsalted butter
  • 2 garlic cloves, bruised (e.g. crush under chef's knife)
  • 1/4 cup freshly grated Romano cheese
  • 2/3 cup fat-free egg substitute (or just use eggs, it's cheaper)
  • 1 tablespoon finely chopped flat-leaf parsley
  • Freshly ground pepper

Directions
  1. Cook the spaghetti
  2. While spaghetti is cooking, melt butter in skillet and add bacon, shallot, and garlic. Saute' until the bacon, shallot, and garlic are browned which takes about 5 minutes. Throw out garlic. If spaghetti is done, proceed, otherwise set skillet to the side.
  3. Drain spaghetti and add it to the skillet over low heat. Now add the egg substitute and cheese and mix this. It will take about 2 minutes for the egg component to cook - keep stirring.
  4. Sprinkle parsley and pepper and server.
