Spaghetti Carbonara LIGHT

- 6 ounces spaghetti shopping list
- 1 shallot, finely chopped shopping list
- 4, 1oz. slices Canadian bacon (trim the fat off) and cut into matstick size pieces shopping list
- 1 tablespoon plus 1 teaspoon unsalted butter shopping list
- 2 garlic cloves, bruised (e.g. crush under chef's knife) shopping list
- 1/4 cup freshly grated romano cheese shopping list
- 2/3 cup fat-free egg substitute (or just use eggs, it's cheaper) shopping list
- 1 tablespoon finely chopped flat-leaf parsley shopping list
- Freshly ground pepper shopping list
How to make it
- Cook the spaghetti
- While spaghetti is cooking, melt butter in skillet and add bacon, shallot, and garlic. Saute' until the bacon, shallot, and garlic are browned which takes about 5 minutes. Throw out garlic. If spaghetti is done, proceed, otherwise set skillet to the side.
- Drain spaghetti and add it to the skillet over low heat. Now add the egg substitute and cheese and mix this. It will take about 2 minutes for the egg component to cook - keep stirring.
- Sprinkle parsley and pepper and server.
