- 2 medium vidalia onions, sliced 1/4" thick shopping list
- 2 Tbs. oleo shopping list
- 1 1/2 pounds fish fillets (Rock cod or red snapper) shopping list
- 1 Tbs lemon juice shopping list
- 1 tsp. Lawrey's seasoned salt shopping list
- freshly ground black pepper to taste shopping list
- 4 medium tomatoes, sliced 1/4" thick shopping list
- 1/2 cup white wine shopping list
- 3 Tbs. chopped parsley or fresh dill shopping list
How to make it
- In a heavy skillet or eclectric fry pan (set at 350 degrees), saute onions in oleo til soft and golden.
- Wipe fish with a cloth and cut into serving size pieces. Sprinkle with lemon juice and Lawrey's salt.
- Arrange fish on top of onion. Cover with tomato slices and pour white wine over all. Cover and cook for about 20 minutes or til fish flakes. Sprinkle with parsley or dill, pepper and a little more Lawrey's.
