How to make it

  • Preheat oven at 350. Prepare 12 muffin pans with cooking spray and flour; set aside. In a mixing bowl, combine flour, baking soda, cinnamon, and salt. In another mixing bowl, combine egg whites, brown sugar, sour cream, vanilla extract, apples, and cranberries. Mix dry ingredients with wet ingredients just until moistened. Use an ice cream scoop to fill muffin pans 2/3 full. Bake 20 to 30 minutes, or until lightly browned.
  • Enjoy!!!!!!!!!

    Low fat recipes were popular in the 1980's and 90's, but they are no longer healthy for you, especially for kids! But this was the only recipe that popped up when I searched for apple and cranberry muffins!
    So, I subbed the egg whites for two whole eggs and used full fat sour cream.
    The kids loved it, it has a nice cinnamon flavor with a pop of tartness from the fresh cranberries.
    I might make this into a loaf and top it with a glaze next time :)
