Okay...it's grill season and one of my favs is scrimp on the grill. And there are so many combinations that go good with scrimp (as Forrest would say). Veggies and fruits like pineapple...be wild and crazy

Ingredients
  • Shrimp (about 6 per person)
  • Orange,yellow,green bell pepper
  • Red onions
  • Zucchini
  • Olive oil
  • Salt
  • Pepper

Directions
  1. Peel Shrimp, set aside
  2. Cut veggies into approx. size of the shrimp. Veggies can be
  3. about 1/2" thick.
  4. Take skewers and alternate shrimp with veggies
  5. Sprinkle with salt and pepper
  6. Drizzle olive oil over each kabob once assembled
  7. Get grill HOT
  8. Place kabob's on grill, close lid for about 3 1/2 minutes,
  9. open and turn kabobs. Close grill for another 3 1/2 minutes.
  10. Open grill and flip one more time.
  11. Watch for shrimp to turn pink .
  12. Remove from grill and serve kabobs on top of rice if desired.
