Chilled Plum Soup

- 1 Qt. apple juice shopping list
- 2 1/2 lbs. plums, chopped shopping list
- 2 oz. honey shopping list
- 1 Sachet d'Epices (Ingredients found below) shopping list
- 1 tbsp lemon juice shopping list
- Sachet d'Epices: (wrap in cheesecloth and tie with butcher's twine) shopping list
- 3 parsley stems shopping list
- 1 bay leaf shopping list
- 1/2 tsp. dried thyme shopping list
- 1/2 tsp cracked peppercorns shopping list
- 1 garlic clove, crushed shopping list
- 2 large slices fresh ginger shopping list
- 1 cinnamon stick shopping list
- 8 allspice berries shopping list
- 8 black peppercorns shopping list
How to make it
- Combine apple juice, plums, honey and sachet in a medium size soup pot. Simmer until plums are tender then discard sachet.
- Puree soup in blender until soup is smooth.
- Stir in lemon juice and chill.
- Serve in chilled soup bowl with a dollip of creme fraiche and almond slivers.
