Kansas City Carbonara Recipe
This has fresh made pasta and kansas city bacon along with a little garlic, fresh cream and cheese. This is just decadent.

Ingredients
  • 4 eggs
  • 2 cups white flour
  • 1 tbs kosher salt
  • olive oil as needed
  • 3 egg yolks
  • 2 cups fresh cream
  • 1 cup fresh grated parmesan cheese
  • 1 pound kansas city bacon, finely diced

Directions
  1. First we prepare the pasta. Add 2 cups of white flour to mixing bowl and add the salt and mix around. Make a well in the center and add the eggs and beat on low with dough hook until well mixed, about 3 minutes or more. Add more flour as needed or olive oil to thin if needed. If you have a pasta machine use it after about 20 minutes cutting the pasta into spaghetti noodles or thin fettucinne. Set aside to let dry slightly.
  2. In a large pot heat a lot of water and add about 2 tbs kosher salt and bring to a boil. While this is happening cook the bacon until crisp. Set aside and remove any excess grease from this. Add the cream to this and beat the egg yolks. Add a little cream to this to temper it, so you do not have scrambled eggs. Slowly add the cream egg mixture to the pan and heat over low heat. Cook the pasta for about 3 minutes and it is done. Fresh pasta takes no time to cook. Drain the pasta and put the pasta in a large bowl and add the sauce and mix this all together. Add the cheese lastly. Enjoy.

This is kind of a cross between and alfredo and a carbonarra. I save the eggwhites and use them in omelets the next day. This is very good. Let me know how it turns out for you. Jeannie

Alterations


If you have a budget that you could care less about go right ahead and use pancetta. It would be wonderful for the fanciest of company.
