Sorta Paella Recipe
I made this up to resemble a traditional paella. However, I lived in a land-locked state hours away from fresh seafood, so this relies on what I could find easily in the local super-market.

Ingredients
  • 1 lb. boneless, skinless chicken breast, cut into bite-size chunks
  • 1 lb. smoked turkey sausage, sliced into 1/2 in. rounds
  • 1 lb. frozen shrimp (thawed) or fresh; peeled, cleaned and tails removed
  • 1 small package of saffron flavored rice ( I use Mahatma brand)
  • 1/2 sweet yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 C. frozen whole kernel corn
  • 1 C. frozen peas
  • 1 tsp. Tabasco sauce
  • Fresh black pepper to taste

Directions
  1. Cook rice according to package directions.
  2. In a large skillet or pot with a lid, brown chicken over medium high heat in 1 Tbs. olive oil.
  3. Reduce heat to medium and add onion. Cook until onion begins to soften.
  4. Add shrimp and cook just until they begin to turn pink, but are not fully cooked.
  5. Add sausage, garlic, corn and peas (still frozen). Cover and simmer for 10 minutes or until the veggies are tender.
  6. Once the rice is done, add it to the large pan/pot, add Tabasco and pepper, and serve.

This sounds so good, almost like a gumbo, but easier! Love it!
