Acorn Squash Baked With Pineapple

- 3 acorn squash halved shopping list
- 2 tablespoons dry sherry shopping list
- 2 tablespoons brown sugar shopping list
- 6 tablespoons butter shopping list
- 1/2 cup crushed pineapple drained shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1 teaspoon salt shopping list
How to make it
- Preheat oven to 425.
- Scoop out squash seeds and fibers then discard.
- Place squash in greased baking dish.
- Put 1 teaspoon each of sherry, brown sugar and butter in each squash half.
- Cover and bake 30 minutes or until tender.
- Scoop squash out of shells leaving wall about 1/4" thick.
- Mash squash and combine with remaining butter, pineapple, nutmeg and salt.
- Mix well to blend then spoon back into shells and bake 15 minutes longer.
