Rumford Cornmeal Waffles Recipe
from "Rumford Everyday Cookbook for the Housekeeper and Student" no publish date but probably from 1930's i serve these with lots of butter and maple syrup, sometimes with macerated strawberries

Ingredients
  • 2 cups flour
  • 3 teaspoons Rumford baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons cornmeal
  • 2 eggs
  • 2/3 cup milk
  • 3 tablespoons melted shortening

Directions
  1. sift together the flour, baking powder, and salt
  2. add the sugar and cornmeal
  3. mix to a light batter with the beaten eggs, milk and melted shortening.
  4. bake in well greased waffle iron.

Nice easy version you got here posted! My cornmeal waffle recipe requires the separating of eggs, etc. I bet your version tastes great!
