I had this served with a blueberry leggo my eggo waffle and a some turkey sausage patties.

Ingredients
  • 8 eggs- I used Jumbo doesn't matter...
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 handful of mushrooms
  • 1/2 green or red pepper
  • 1/4 cup of onion
  • 1 cup milk- I use 2%
  • 3/4 cup shredded sharp cheddar or american cheese
  • 1 tbsp. of margarine
  • dash of parsley
  • 1 square or round like 9x9 or close too, pyrex glass dish worked good for me and didn't stick at all....

Directions
  1. Start by dicing the veggies and then put in container and microwave for about a minute to get em tender...
  2. Crack the eggs in another bowl and add the salt, pepper, milk, parsley and wisk well...
  3. After the veggies cooled down add them to eggs and the margarine and half the cheese
  4. Spray a little cooking spray in the dish and add the egg mixture
  5. Place dish on the lower rack of the oven on a cookie sheet in a 325 degree oven for about 60-70 minutes
  6. 20 minutes prior to doneness add the remaining cheese on top....
  7. After that let it cool for a second then indulge into the greatest no crust, no guilt ,healty treat you will love.
