Curry Fiji

- 4 oz.ghee shopping list
- 2 large brown onion,chopped shopping list
- 3 large potatoes,diced shopping list
- 8 oz.French beans,sliced shopping list
- 1 lb. zucchini, sliced shopping list
- 2 c. stock or water and vegetable stock cubes shopping list
- 1-2 tbsp. curry paste(according to taste) shopping list
- 2 x 10 oz. cans red kidney beans shopping list
- 2 tbsp.vegetable oil shopping list
- 8 oz. mushrooms, sliced shopping list
- salt and pepper shopping list
How to make it
- Heat ghee in a large saucepan,
- add onions and saute until golden brown.
- Add potatoes and french beans,
- mix throughly and cook for 15 min.
- Add zucchini,stock,curry paste and
- red kidney beans, cook for 10 min more.
- In the meantime, heat oil in a frying pan and saute
- mushroomsfor 5 min. Add to ingredients in saucepan,
- season to taste with salt and pepper and mix thoughly.
- Serve curry with papadums and a green salad.
