A nice spicy vegatable curry.

Ingredients
  • 4 oz.Ghee
  • 2 large Brown onion,chopped
  • 3 large Potatoes,diced
  • 8 oz.French beans,sliced
  • 1 lb. Zucchini, sliced
  • 2 c. Stock or water and vegetable stock cubes
  • 1-2 tbsp. Curry paste(according to taste)
  • 2 x 10 oz. cans Red kidney beans
  • 2 tbsp.Vegetable oil
  • 8 oz. Mushrooms, sliced
  • Salt and pepper

Directions
  1. Heat ghee in a large saucepan,
  2. add onions and saute until golden brown.
  3. Add potatoes and french beans,
  4. mix throughly and cook for 15 min.
  5. Add zucchini,stock,curry paste and
  6. red kidney beans, cook for 10 min more.
  7. In the meantime, heat oil in a frying pan and saute
  8. mushroomsfor 5 min. Add to ingredients in saucepan,
  9. season to taste with salt and pepper and mix thoughly.
  10. Serve curry with papadums and a green salad.
