Salmon Stir Fry Recipe
This is one of the first ever meals I invented after giving up red meat, on my way to becoming total vegetarian.

Ingredients
  • 1 tbsp vegetable oil
  • 1 salmon fillet
  • 1/2 zucchini, diced
  • 1/2 red pepper, diced
  • basilic
  • garlic
  • salt

Directions
  1. Heat the oil in a small to medium sized pan.
  2. Let the salmon cook on low heat for several minutes.
  3. Add diced veggies and continue to stir, as salmon cooks.
  4. After about 5 minutes, flip the fish and add the spices.
  5. Turn the heat down so the veggies and fish can simmer and take in the flavor of the spices.
  6. Optional- cut up the fish so it cooks through faster, and mix together with a wooden spoon.
  7. After the veggies/salmon are cooked, serve and enjoy!

Very nice. Love salmon but have to say never used as a stirfry. Will definately try.
