Fish With Cornbread Stuffing Recipe
Very light, very refreshing and very tasty. I usually serve this with a slaw and sliced tomatoes. Enjoy

Ingredients
  • 1/2 cup chopped white onion
  • 1/2 cup chopped celery
  • 1/4 cup butter
  • 2 cups cornbread stuffing mix
  • 1/4 cup snipped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground sage
  • 1 egg slightly beaten
  • 4 fish steaks
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon paprika

Directions
  1. Cook and stir onions and celery in butter over medium heat until tender then remove from heat.
  2. Stir in cornbread stuffing mix, parsley, salt, pepper, ground sage and egg.
  3. Place fish steaks in greased jelly roll pan and sprinkle with salt, lemon juice and paprika.
  4. Spoon stuffing around fish steaks then cook uncovered at 350 for 40 minutes.
