Ingredients
  • 3 tablespoons oil
  • 6 shallots chopped
  • 2 hot red chili peppers cut lengthwise
  • 3 teaspoons ginger root grated
  • 6 cloves garlic crushed
  • 2 pounds boneless skinless chicken breasts cut into medium pieces
  • 3 stalks fresh lemon grass ends crushed
  • 2 cups water
  • 1-1/2 cups coconut milk

Directions
  1. Heat oil in large frying pan.
  2. Add shallots, peppers, ginger and cloves.
  3. When golden brown add chicken breasts, lemon grass, water and coconut milk then bring to a boil.
  4. When chicken is almost cooked add sugar and coconut milk and return to a boil.
  5. Lower heat and allow chicken to simmer uncovered until very tender.
  6. Add salt to taste then serve with hot rice.
