Latin Tequila Cream Chicken

- 1 tablespoon butter shopping list
- 2 medium jalapeno peppers seeded and chopped shopping list
- 1/4 medium red onion finely chopped shopping list
- juice of 1 large lime shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 2 cups sour cream shopping list
- 2 avocados shopping list
- 4 hot cooked chicken breast halves shopping list
- 1/2 cup tequila shopping list
How to make it
- In medium saucepan melt butter then add jalapenos and onion.
- Sauté over medium heat 3 minutes stirring until vegetables are softened.
- Reduce heat and add lime juice, salt and pepper.
- Add sour cream and whisk until mixture comes to a boil then set aside.
- Slice avocado and divide among 4 serving plates creating a fan shape on each plate.
- Slice hot chicken breasts into lengthwise strips and set over avocado.
- Add tequila to sour cream sauce and heat through.
- Use to top chicken and avocado then serve with rice or salad.
