Mayonnaise Recipe
This is my take on basic homemade mayonnaise

Ingredients
  • 1/4 cup fresh lemon juice
  • 1/4 tsp honey
  • 1/2 tsp. soy sauce (the soy sauce will make the mayo a light beige color -- if you don't care for this look, substitute a bit of salt instead)
  • 1 whole egg
  • 1 egg yolk
  • 1 1/4 cups good quality olive oil
  • Optional additions:
  • 1/2 cup fresh parsley
  • 2-10 garlic cloves, crushed
  • 1-3 tsp wasabi powder
  • 2 T high quality prepared mustard
  • etc, etc, etc

Directions
  1. Combine all ingredients but the oil in a blender jar. With the blender running on its slowest speed, slowly incorporate the oil in one continuous, long drizzle. The mayonnaise will thicken as you add the oil. As soon as you've added all the oil and the mayo is thick, turn off the blender! Over-blended mayonnaise will mysteriously turn runny again.
  2. This makes a small batch, which I prefer for freshness and flavor.
