Mayonnaise

- 1/4 cup fresh lemon juice shopping list
- 1/4 tsp honey shopping list
- 1/2 tsp. soy sauce (the soy sauce will make the mayo a light beige color -- if you don't care for this look, substitute a bit of salt instead) shopping list
- 1 whole egg shopping list
- 1 egg yolk shopping list
- 1 1/4 cups good quality olive oil shopping list
- Optional additions: shopping list
- 1/2 cup fresh parsley shopping list
- 2-10 garlic cloves, crushed shopping list
- 1-3 tsp wasabi powder shopping list
- 2 T high quality prepared mustard shopping list
- etc, etc, etc shopping list
How to make it
- Combine all ingredients but the oil in a blender jar. With the blender running on its slowest speed, slowly incorporate the oil in one continuous, long drizzle. The mayonnaise will thicken as you add the oil. As soon as you've added all the oil and the mayo is thick, turn off the blender! Over-blended mayonnaise will mysteriously turn runny again.
- This makes a small batch, which I prefer for freshness and flavor.
