Ingredients
  • 2 medium potatoes, thinly sliced
  • 1C sliced small leeks (about 1/8" slices)
  • 3 Tbl water
  • 1 (10 ounce) round pre-baked thin pizza crust or Italian bread shell
  • 1/2 C sour cream
  • 2 ounces Shredded Swiss cheese
  • 2 tsp chopped fresh rosemary (1 isp dried)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Note: if possible, use fresh rosemary

Directions
  1. Heat oven to 425
  2. Place potatoes in a microwave safe dish, top with leeks; sprinkle with 3 Tbl water
  3. Cover and microwave on HIGH until potatoes are fork tender (3 to 6 minutes)
  4. Place pizza crust on on cookie sheet; spread with sour cream to within 1/2 onch of edge.
  5. Arrange potato slices and leeks over sour cream
  6. Sprinkle with cheese, rosemary, salt and pepper
  7. Bake for 8 to 10 minutes or until cheese is melted
