Jam Or Preserve Filled  Butter Cookies Recipe
Use your favorite jam or prserves for filling thses tasty butter cookies. I like to fill each log with various jams for a variety of the filled cookie. These freeze well

Ingredients
  • 3/4 cup butter
  • 2/3 cup sugar
  • 1 fresh egg
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • Jam or Preserves ( apricot, blueberry, raspberry, pineapple etc. )

Directions
  1. Preheat oven to 350°.
  2. Cream butter and sugar together until well blended.
  3. Add egg and vanilla and mix well.
  4. Blend in flour and baking powder.
  5. Refrigerate dough for 2 hours.
  6. Shape dough into 2 logs on a parchment lined baking sheet.
  7. Make a depression down the center of each log and fill with jam or jelly.
  8. Bake for 15 to 20 minutes or until golden brown.
  9. Remove from oven and slice into 1" pieces.
  10. Cool on a rack and store in an airtight container.
