Diabetic Jambalaya

- 1 boneless, skinless chicken breasts shopping list
- 1 1/2 cups of 60 to 70 count PRE-cooked shrimp defrosted and without tails shopping list
- 2 big Andouille sausage links shopping list
- 1 bell pepper diced shopping list
- 1 medium onion diced shopping list
- 4 celery stalks diced shopping list
- 1 1/2 cups chopped okra shopping list
- 1 can diced tomatoes or dice fresh ones up, try and keep the juice though shopping list
- 6 garlic cloves chopped shopping list
- creole seasoning to taste (recipe is at end of the Jambalaya recipe in this blog) shopping list
- Tobasco Sauce to taste shopping list
- CHEF EMERIL'S creole seasoning shopping list
- 2 1/2 tablespoons paprika shopping list
- 2 tablespoons salt shopping list
- 2 tablespoons garlic powder shopping list
- 1 tablespoon onion powder shopping list
- 1 tablespoon black pepper shopping list
- 1 tablespoon cayenne pepper shopping list
- 1 tablespoon dried leaf oregano shopping list
- 1 tablespoon dried leaf thyme shopping list
How to make it
- Boil the chicken and sausage until half way done.
- Dice the chicken and slice the sausage into bite sized peices.
- Keep the broth in case ya need it to put added moisture into the Jambalaya or you can use it as stock in other recipes.
- Put the canned tomatoes or fresh with juice in a pan or pot.
- Add your creole seasoning and tobasco sauce a little at a time until you get your desired taste. Remember, you can always add more spice, but it's hard to take it out of a dish.
- Add the veggies, chicken and sausage, NOT THE SHIRMP YET.
- Let it cook down some on a medium low heat. If it needs more juice, add some of the left over chicken/sausage broth.
- When the veggies and meat are done and juice has thickend turn the heat on low and add the shirmp.
- Let the heat of the dish and low heat warm the shrimp for about 2 to 3 minutes or until they are hot enough for ya. Do not over cook the shrimp.
- Now is the time to add more spices or broth.
- You want it thicker if you are having it without rice
- You want it wetter if it's being poured over rice.
