Ingredients
  • 6- 10oz Red Snapper fillets
  • Garlic powder
  • Lemon juice
  • Seafood Seasoning (any brand)
  • Crabmeat and Shrimp Dressing:
  • 4 cups chopped onion
  • 2 cups chopped celery (I sometimes omit)
  • 1 cup vegetable oil
  • 1 lb lump crabmeat
  • 1/2 lb cooked shrimp, coarsley chopped or whole salad shrimp
  • 2 tbsp fresh parsley
  • 1 tbsp dried basil
  • 1 tbsp creole seasoning
  • 6 cups of bread crumbs

Directions
  1. Preheat to 375 degrees F or Broil.
  2. In an 8 quart pot simmer onions and celery in oil until translucent.
  3. Add crabmeat, shrimp, basil, and Creole seasoning, and simmer for 15 minutes longer.
  4. Remove from heat and stir in bread crumbs and parsley.
  5. Sprinkle filets with garlic powder and rub with lemon juice.
  6. Cut pocket in filet and stuff with dressing and sprinkle with seasonings.
  7. Bake at 375 degrees 20 to 30 minutes, or until done.
  8. or
  9. Broil for about 10 minutes until fish flakes. 5-6" away from heat source.
