How to make it

  • Preheat oven to 350 degrees F.
  • Place all ingredients into a large clay pot or casserole dish, add salt to taste and cover tightly.
  • Bake for 2- 2 1/2 hours or until the beans, veggies and meat are tender.
  • Check from time to time to make sure the soup doesn't dry out and just add extra stock if you need too.
  • Serve the soup straight from the pot garnished with olive oil and parsley.
  • Serve with some nice bread.
