Turkish-Style Oven Soup

- 1/3 cup dried garbanzo beans, soaked overnight and drained shopping list
- 1/3 cup navy beans, soaked overnight and drained shopping list
- 1/2 cup bulgur wheat shopping list
- 4 oz boneless lamb, 1" cubes shopping list
- 4 tbsp olive oil shopping list
- 1 onion, chopped shopping list
- 2 carrots, diced shopping list
- 1 tbsp chopped fresh mint shopping list
- 1 tbsp dried oregano shopping list
- 2 tomatoes, diced shopping list
- 4 whole red chiles shopping list
- 1 tsp ground cumin shopping list
- 1 tsp ground coriander shopping list
- 1 tsp cinnamon shopping list
- 5 cups beef stock shopping list
- Garnish: shopping list
- extra virgin olive oil and fresh parsley shopping list
How to make it
- Preheat oven to 350 degrees F.
- Place all ingredients into a large clay pot or casserole dish, add salt to taste and cover tightly.
- Bake for 2- 2 1/2 hours or until the beans, veggies and meat are tender.
- Check from time to time to make sure the soup doesn't dry out and just add extra stock if you need too.
- Serve the soup straight from the pot garnished with olive oil and parsley.
- Serve with some nice bread.
