Turkish-Style Oven Soup Recipe
I like to eat this in the winter time. You can also do in the crockpot on Low for 8-10 hours.

Ingredients
  • 1/3 cup dried Garbanzo beans, soaked overnight and drained
  • 1/3 cup Navy beans, soaked overnight and drained
  • 1/2 cup Bulgur wheat
  • 4 oz boneless lamb, 1" cubes
  • 4 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 tbsp chopped fresh mint
  • 1 tbsp dried oregano
  • 2 tomatoes, diced
  • 4 whole red chiles
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp cinnamon
  • 5 cups Beef stock
  • Garnish:
  • Extra virgin olive oil and fresh parsley

Directions
  1. Preheat oven to 350 degrees F.
  2. Place all ingredients into a large clay pot or casserole dish, add salt to taste and cover tightly.
  3. Bake for 2- 2 1/2 hours or until the beans, veggies and meat are tender.
  4. Check from time to time to make sure the soup doesn't dry out and just add extra stock if you need too.
  5. Serve the soup straight from the pot garnished with olive oil and parsley.
  6. Serve with some nice bread.
