White Bean N Greens Soup Vegan Recipe
This soup was an experiment with items I had laying around the kitchen. The spicy chili sauce and the sweet hint of cinnamon gives this soup a unique flavor, while the beans and leafy greens add hearty texture.

Ingredients
  • 4 Cups Water
  • 2 Cans Vegetable Stock (Or 4 Cups)
  • 2 Cans Sliced White Potatoes (Undrained)
  • 3 Cans White Beans (Undrained)
  • 2 Cans Chickpeas (Undrained)
  • 1 Bag Ready To Eat Collared Greens
  • 1 Bag Ready To Eat Spinach
  • (You can substitute frozen or canned greens.)
  • 3 TSP Sriracha HOT Vietnamese Chili Sauce
  • 2 TBSP Cinnamon Powder
  • 2 TBSP Curry Powder
  • 2 TBSP Chili Powder
  • Salt and Pepper To Taste

Directions
  1. In a large pot, combine water, stock and greens. Cover and let cook down until greens are tender.
  2. Add all other ingredients, and cook on medium-low heat for 30-45 minutes or until all flavors are well infused.
