Ingredients
  • 1 banana leaf, passed over a flame to soften (Optional)
  • 1 kilogram of Pork diced
  • 2 Jalapenos (optional) finely chopped
  • 4 tablespoons of annatto seeds or 3 ounces of Achiote paste
  • 1 cup of orange juice
  • 1 cup of lime juice
  • ½ teaspoon ground cumin
  • 2 tablespoons of oregano
  • ½ teaspoon of salt
  • ½ teaspoon of peppercorns
  • 1 teaspoon ground cinnamon
  • 8 allspice berries
  • 8 garlic cloves, peeled and crushed
  • 2 tablespoons of olive oil

Directions
  1. Crush all the spices together
  2. Puree the garlic, jalapenos, orange juice and lime juice in a food processor
  3. Mix the spices with the puree
  4. Marinate the pork with the puree for 20 minutes
  5. Place the banana leave in an oven-proof dish
  6. Wrap the pork and puree in the leave
  7. Cook in a pre-heated oven at 350F/175C for 90 minutes
