Cochinita Pibil

- 1 banana leaf, passed over a flame to soften (Optional) shopping list
- 1 kilogram of pork diced shopping list
- 2 jalapenos (optional) finely chopped shopping list
- 4 tablespoons of annatto seeds or 3 ounces of Achiote paste shopping list
- 1 cup of orange juice shopping list
- 1 cup of lime juice shopping list
- ½ teaspoon ground cumin shopping list
- 2 tablespoons of oregano shopping list
- ½ teaspoon of salt shopping list
- ½ teaspoon of peppercorns shopping list
- 1 teaspoon ground cinnamon shopping list
- 8 allspice berries shopping list
- 8 garlic cloves, peeled and crushed shopping list
- 2 tablespoons of olive oil shopping list
How to make it
- Crush all the spices together
- Puree the garlic, jalapenos, orange juice and lime juice in a food processor
- Mix the spices with the puree
- Marinate the pork with the puree for 20 minutes
- Place the banana leave in an oven-proof dish
- Wrap the pork and puree in the leave
- Cook in a pre-heated oven at 350F/175C for 90 minutes
