Spinach Wild Rice And Mushroom Casserole Recipe
I make this a lot to get the kids to eat spinach.

Ingredients
  • 2 10 oz packages frozen chopped spinach, cooked and drained well.
  • 8 oz cream cheese, softened
  • 1 lb mushrooms, sliced
  • 1 6 oz package Uncle Ben's original wild rice.
  • 2 cups broth (any kind)
  • 1/3 cup water
  • 2 tbsp butter
  • salt and pepper to taste
  • Thyme

Directions
  1. Preheat oven to 350 degrees F.
  2. Mix warm spinach with cream cheese.
  3. Cook rice in broth and water.
  4. Saute mushrooms in butter. When done season with thyme, salt and pepper.
  5. In a baking dish layer rice, mushroom and spinach mixture.
  6. Bake for 45 minutes.

I am wild rice lover and I am always thowing spinach into my cooking not only to get the kids to eat it but my husband as well. This recipe is a keeper.

Yeah, this was a great recipe and gave me a great idea for some alterations. Kudos Jencathen! That sort of turned it around a bit, but I still ended up with the rice, sauteed mushrooms (same as directions), and spinach. I layered it as directed and topped with some parmesan cheese, provolone, mozzarella. lol. I love cheese. :P Thanks for a great recipe! :P
