Vichyssoise

- 3 medium sized leeks, thoroughly cleaned and sliced (white part only) shopping list
- 1 medium sweet onion, peeled and thinly sliced shopping list
- 2 Tbs. butter shopping list
- 4 medium potatoes, peeled and thinly sliced shopping list
- 4 cups chicken stock (I like Kitchen Basic, in the box) shopping list
- 1 or 2 cups heavy cream shopping list
- salt and white pepper, to taste shopping list
- chopped chives shopping list
How to make it
- Saute leeks and onion in the butter; add the potatoes and chicken stock. Simmer, covered, for about 15 minutes, or til tender. Put through a sieve, blend in your blender or process in your food processor til smooth. Add cream, to your taste, and seasonings. Chill thoroughly. Serve sprinkled with chives.
