How to make it

  • Saute leeks and onion in the butter; add the potatoes and chicken stock. Simmer, covered, for about 15 minutes, or til tender. Put through a sieve, blend in your blender or process in your food processor til smooth. Add cream, to your taste, and seasonings. Chill thoroughly. Serve sprinkled with chives.
