Spinach Salad

- 4 slices bacon (turkey bacon workes well too) shopping list
- 6 cups spinach leaves loosely packed shopping list
- 1 1/2 cups fresh mushrooms sliced shopping list
- 1/2 cup purple onions (thinly sliced and seperated into rings) shopping list
- 3 large eggs (hardboiled and sliced) shopping list
- ------dressing------ shopping list
- 1/4 cup red wine vinegar shopping list
- 1 tablespoon sugar shopping list
- 1/2 teaspoon dry mustard shopping list
- 2 tablespoons lemon juice shopping list
- 2 teaspoons vegetable oil shopping list
- 1/8 teaspoon fresh ground pepper shopping list
How to make it
- Fry the bacon until all fat is rendered and it is crispy. Set aside and let cool before crumbling into pieces.
- Mix all dressing ingredients and bacon pieces well ommitting the pepper (either shake in a jar or whisk vigorously) until completely combined and set aside.
- Mix spinach, mushrooms, onions, and eggs in a big salad bowl. Pour all dressing all over salad and toss well. Serve within 15 minutes with a sprinkling of pepper.
