Bread Salad With Tomatoes Recipe

Ingredients
  • 1/2 of a small baguette
  • 1 large clove garlic, peeled
  • 4 Tbs. olive oil
  • 6 medium to large ripe tomatoes OR heirloom tomatoes, cut into
  • large chunks and placed in a colander over a bowl
  • 1/2 cup chopped green onions
  • 3 Tbs. fresh sweet basil, rolled and chopped
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • salt and pepper, to taste
  • Bibb lettuce

Directions
  1. Slice baguette in half lengthwise. Rub the bread with the peeled garlic clove and brush on the 4 Tbs. olive oil. Slice into croutons and place on a baking sheet, crust side down. Bake in a 300 degree oven til nice and golden, about 30 minutes.
  2. Drain any accumulated juice from the tomatoes and place them in a dry bowl. Add the croutons, onion and basil. Mix the vinegar and oil; season to taste with salt and pepper. Toss with salad. Serve on leaves of Bibb lettuce. Do not mix til right before service.
