Bread Salad with Tomatoes

- 1/2 of a small baguette shopping list
- 1 large clove garlic, peeled shopping list
- 4 Tbs. olive oil shopping list
- 6 medium to large ripe tomatoes OR heirloom tomatoes, cut into shopping list
- large chunks and placed in a colander over a bowl shopping list
- 1/2 cup chopped green onions shopping list
- 3 Tbs. fresh sweet basil, rolled and chopped shopping list
- 1/4 cup balsamic vinegar shopping list
- 1/2 cup olive oil shopping list
- salt and pepper, to taste shopping list
- bibb lettuce shopping list
How to make it
- Slice baguette in half lengthwise. Rub the bread with the peeled garlic clove and brush on the 4 Tbs. olive oil. Slice into croutons and place on a baking sheet, crust side down. Bake in a 300 degree oven til nice and golden, about 30 minutes.
- Drain any accumulated juice from the tomatoes and place them in a dry bowl. Add the croutons, onion and basil. Mix the vinegar and oil; season to taste with salt and pepper. Toss with salad. Serve on leaves of Bibb lettuce. Do not mix til right before service.
