Tomato Relish

- 4 quarts fresh tomatoes,peeled,seeded and chopped shopping list
- 2 cups chopped onions(white) shopping list
- 2 cups bell pepper ,chopped shopping list
- 1 1/2 cups celery chopped shopping list
- 1 or 2 jalapeno pepper,seeded and chopped,(use more peppers if you want hotter) shopping list
- 2 cups dark brown sugar shopping list
- 3 tbsp salt shopping list
- 3 tbsp pickling spice shopping list
- 1tsp ground clove shopping list
- 1 1/2 sticks cinnamon shopping list
- 1 tsp celery salt shopping list
- 1tsp dry mustard shopping list
- 2 cups cider vinegar shopping list
- 6 pint jars,ready for sealing shopping list
How to make it
- in a Large pot cook vegetables and sugar for 45 min stirring constantly to prevent sticking.
- place the stick cinnamon and pickling spicesin a piece of cloth,tied tight,and cook along with the vegertables.
- add the veinegar and cook(simmer)for another 45 min,keep stirring.
- BY now the relish should have thickenedand be ready to pour into the 6 jars,if its not thick enough to suit you then simmer longer.
- Pour intot he jars and seal,this relish is great on a Buffet table,and makes a great addition to any meat entree.
- it also adds a Zip to a sandwich,meat loaf or sliced turkey.
